Onions is an ingredient used in most recipes but the irritating  part is that it has the ability to cause even the strong and mighty to shed tears. Enzymes that were kept separate are now free to mix with the sulfenic acids to produce propanethiol S-oxide, a volatile sulfur compound that wafts upward toward your eyes. This gas reacts with the water in your tears to form sulfuric acid. The sulfuric acid burns, stimulating your eyes to release more tears to wash the irritant away. The volatile sulfur compound is also responsible for the strong smell of onions. These same chemicals provide powerful health benefits for the onion consumer. Research, according to the University of Nebraska, has suggested that these sulfur compounds, along with a phytochemical found in abundance in onions called Allicin, could lower cholesterol levels and blood pressure. Sulfur compounds have been attributed to preventing heart disease according to Utah State University.

How to Chop Onions without Crying.

Use a sharp knife.

Refrigerate before cutting

Freeze onions for about 15-20mins before cutting. This slows down the chemical reaction and ensure that less volatile gas is released.

Cut under water

Cutting onions under water reduces the amount of irritant gas released. Though this act may be clumsy but it dose work.

Light a candle

This gets rid of the gas produced by onions  making it less effective.

Use fan to blow the irritant away.

The gas produced by onions can be blown away with fan to prevent it from getting to the eyes.
